the Birria Taco
What is Birria?
Birria is a traditional Mexican dish that originates from the state of Jalisco. Initially conceived as a festive food, it has become a beloved staple in Mexican cuisine, renowned for its rich, complex flavors. Birria’s origins can be traced back to the colonial period when goats, brought by the Spanish, became prevalent in the region. These goats, considered a nuisance due to their overpopulation and tough meat, were ingeniously transformed by locals into this exquisite dish.
While goat was traditionally the meat of choice, Birria is now commonly made with tougher cuts of beef and lamb. The magic is in the marinade; a vibrant blend of tomato and spices, including dried Mexican chillies, garlic, cumin, bay leaves, thyme, cinnamon, all spice and more. This marinade infuses the meat with deep flavors as it is slowly cooked over several hours until tender. The resulting dish is often typically served in corn tortillas garnished with onions, coriander, and a squeeze of lime., accompanied by the consomé, a flavourful broth created from the cooking juices which is perfect for dipping the tacos.
