Sodium Citrate
1tbsp
Smoked Paprika powder
1tbsp
Garlic Powder
1tsp
Salt
1100g
Grated cheese
1unit
Fresh Jalapeño (chopped)
Method:
Heat milk gently in a saucepan (don't burn!)
Add Sodium citrate and whisk thoroughly
Add paprika, garlic powder, and salt. Whisk thoroughly. Add Jalapeño and blend.
Add cheese, and stir. Keep on a gentle heat.
Blend. Keep blending until right consistency is reached. Should hold for a long time. If it thickens too much whisk in a splash of milk.
