Arbol chilli flakes

Guajillo chilli flakes

Ancho chilli flakes
150g
Cashews
100g
Garlic cloves
1tbsp
Salt
1tbsp
Sugar
2tbsp
White vinegar
2tsp
Sesame seeds
Method:
Heat the oil in a saucepan. Add garlic and fry until golden brown (5-8 mins). Remove and set aside
Add cashews to oil and fry until golden brown (3-5 mins). Remove and set aside
Turn off heat and wait for about 6-8 minutes (≤120 °C). Add all chilli flakes, stirring constantly for 10-20 seconds.
Cool for another 15-20 minutes. Add all other ingredients and blend. Should be slightly chunky but no whole cashews or garlic cloves.
