Salsa Macha

Ingredients

  • 1000ml Vegetable oil
  • 100g Arbol chilli flakes
  • 50g Guajillo chilli flakes
  • 50g Ancho chilli flakes
  • 150g Cashews
  • 100g Garlic cloves
  • 1tbsp Salt
  • 1tbsp Sugar
  • 2tbsp White vinegar
  • 2tsp Sesame seeds

Method:

  1. Heat the oil in a saucepan. Add garlic and fry until golden brown (5-8 mins). Remove and set aside
  2. Add cashews to oil and fry until golden brown (3-5 mins). Remove and set aside
  3. Turn off heat and wait for about 6-8 minutes (≤120 °C). Add all chilli flakes, stirring constantly for 10-20 seconds.
  4. Cool for another 15-20 minutes. Add all other ingredients and blend. Should be slightly chunky but no whole cashews or garlic cloves.
