Salsa Verde

Ingredients

  • 200g Jalapeño
  • 280g White onion
  • 30g Garlic
  • 25g Salt
  • 85ml Lime juice
  • 1tsp Xanthan gum
  • 2800g Crushed Tomatillos

Method:

  1. Take stems off Jalapeños, quarter onions, add garlic and add all to a 1/2 gastro. Add some oil and a little salt and coat ingredients
  2. Bake ingredients at 220c until well charred
  3. Remove from oven. Add Tomatillos, salt, lime juice and Xanthan gum (dissolved in oil). Blend all ingredients thoroughly.
