Cheese Sauce

Ingredients

  • 1000ml Milk
  • 2.5tbsp Sodium Citrate
  • 1tbsp Smoked Paprika powder
  • 1tbsp Garlic Powder
  • 1tsp Salt
  • 1100g Grated cheese
  • 1unit Fresh Jalapeño (chopped)

Method:

  1. Heat milk gently in a saucepan (don't burn!)
  2. Add Sodium citrate and whisk thoroughly
  3. Add paprika, garlic powder, and salt. Whisk thoroughly. Add Jalapeño and blend.
  4. Add cheese, and stir. Keep on a gentle heat.
  5. Blend. Keep blending until right consistency is reached. Should hold for a long time. If it thickens too much whisk in a splash of milk.
